Valentine’s Day is that special time of year where love is professed by indulging on sweets galore. By the end of all the “I love you” festivities you may find that you’ve gained a whole new pant size. Did you know that Americans purchase 58 million pounds of chocolate in the week leading up to Valentine’s Day? It’s true, according to a survey by Nielson. That is a lot of pounds! Fear not! You don’t have to run and hide from all the temptation chocolate has to offer. These delectable guilt-free Valentine’s Day treats will leave you feeling satisfied without the addition of extra pounds.

Low Fat Pudding Parfait
This delicious recipe looks fancy, tastes great, and is simple to make. You will need a box of fat-free pudding mix in chocolate or banana flavors. You’ll also need fat-free whipped topping, skim milk, and peanut butter. The recipe itself is easy.  First, prepare the pudding mix. Next, combine 1 cup of whipped topping, 1 teaspoon of skim milk, and 2 tablespoons of peanut butter in a mixing bowl. Whip the ingredients together into a creamy consistency.  Serve the pudding in a tall, clear, glass. A wine glass with a ribbon wrapped around the stem and tied into a bow adds a touch of romance. Layer the creamy peanut butter mix over the pudding and the pudding over the mix until you’ve reached the top of the serving dish. Top the dessert with whipped topping and serve.

Dark Chocolate Covered Strawberries
This sensuous dessert is usually served with milk-chocolate but it is even more tantalizing with dark chocolate. Dark chocolate has less sugar and less fat because of the absence of milk. This recipe takes little time to make and is the perfect guilt-free treat.  You will need wax paper, a large plate or baking sheet, dark chocolate chips, and whole, fresh, strawberries with the stems intact.

Melt the chocolate chips in a saucepan on the stove. Place wax paper over a large plate or onto a baking sheet. Wash the strawberries in cool water.  Once the chocolate chips have melted you can begin dipping the strawberries. Hold a strawberry by its stem. Dip the strawberry into the melted chocolate then set it on the wax paper to harden.  Put the tray of yummy treats into the refrigerator to set.

Strawberry Cheesecake Yogurt
How about a very scrumptious yogurt that manages to taste very similar to a slice of strawberry cheesecake without all of the added fat and calories? This is a recipe that can be prepared quickly, requiring only a short list of fairly inexpensive ingredients. You will need low-fat or light vanilla yogurt, fresh strawberries, low-fat graham crackers, and low-fat whipped topping.  Wash and slice 2-3 strawberries and crumble a graham cracker. Place 1 cup of low-fat vanilla yogurt in a bowl. Sprinkle a thin layer of crumbled graham cracker over the yogurt. Arrange the sliced strawberries over the layer of crumbled graham cracker. Top the dessert with a dollop of low-fat whipped topping sprinkled with the rest of the crumbled graham cracker.
