Ginger and Chocolate Mousse

A rich and creamy chocolate mousse recipe doesn’t have to be filled with calories and fat. This indulgent dessert contains only 175 calories and 4 grams of fat per serving.

Ingredients

  • ½ cup or four ounces of unsweetened cocoa powder
  • ¼ cup water (hot)
  • 1 package (12 ounces) tofu
  • ¼ c sugar substitute
  • 3 teaspoons of vanilla extract
  • 2-3 tablespoons fresh, grated ginger

Preparation
Mix in a medium sized bowl, the cocoa powder and water. Cook the mixture slowly over a hot water bath for about 4-5 minutes until the texture is fudge-like in consistency. In a blender or food processor, blend the tofu for about one minute and add the fudge mixture. Next add the sweetener, vanilla, and ginger juice and gratings. Blend all ingredients until the texture is smooth. Spoon the mousse into a parfait or dessert glass and garnish with a fresh mint leaf or raspberries. The mousse is best served when chilled. You may also shave white or dark chocolate for garnishment.

Fluffy Vanilla Cupcakes

At 140 calories per cake and less than 7 grams of fat, one bite of these fluffy vanilla cupcakes will have your sweetheart yearning for more. This recipe has a surprise ingredient that lends to its rich and delicious taste.

Ingredients

  • One 15 ounce can of navy beans, unsalted (drained and rinsed)
  • 5 eggs
  • 2 tablespoons of vanilla extract
  • 1/3 cup honey
  • ¼ cup coconut oil (organic preferred)
  • 1/3 cup coconut flour
  • 1/8 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Preparation
Heat the oven to 350 degrees. In a blender, mix the navy beans, eggs, vanilla, and honey. Once blended well, add the coconut oil, flour, salt, baking powder, and baking soda. Pour the mixture into lined cupcake tins and bake for about 25 minutes. Use any of your favourite low-calorie frosting to the top, when cool.

Apple Flavoured & Heart-Shaped Rice Krispie Treats

At 112 calories and under 10 grams of sugar, this sticky favourite can be combined with rich and tasty ingredients that will have your heart singing. Shape your treat into a heart for added valentine flair.

Ingredients

  • 3 cups brown rice crisp cereal
  • 1 packet of dried apple crisp
  • ¾ cups all-natural peanut butter
  • ½ cup all-natural honey
  • 2 tablespoons vanilla
  • 1 cup chocolate chips (if desired)

Preparation
In a large bowl, mix together the rice cereal and peanut butter. In a separate bowl add four tablespoons of water to the apple crisp packet and stir. Add the honey and vanilla and mix. Pour into the first bowl and mix together. Once all of the ingredients have been blended together, press into a glass tray and shape into small hearts. Using wax paper may help keep the mixture from sticking to your hands. You may frost the treats, sprinkle with powdered sugar, or top with sprinkles. The rice krispie treats are best served when chilled in the refrigerator for about an hour.
