5 Delicious spring salads

Enjoy these easy, healthy and oh-so-tasty spring salad recipes as you celebrate the season!

1. Fruity Spring Salad

Ingredients - Dressing
• 1/3 cup of  apple cider or raspberry vinegar
• 1/3 cup of olive oil
• 2 tablespoons of Stevia (or raw sugar)
• 1/2 teaspoon of salt
• 1/4 teaspoon pepper
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon Piri-Piri sauce (or a hot pepper sauce of your choosing)

Ingredients - Salad
• 6 cups of romaine
• 2 cups of fresh strawberries, quartered
• 1 avocado, peeled and sliced
• 1 x 11 ounce can (drained)mandarin oranges
• 1/2 cup of chopped red onion
• 1/2 cup of chopped, roasted pecans

Combine the dressing ingredients in a jar and shake until all ingredients are well-combined. Add salad ingredients to a bowl and drizzle the dressing over the ingredients and toss lightly. Serve immediately to enjoy while crisp and fresh. Makes 4 generous servings.

2. Watermelon-Peach Salad

• 1 piece of watermelon (approx. 2lbs,) diced
• 2 peaches, diced
• 2 mini cucumbers, sliced
• 1/2 cup of crumbled feta
• 3 tablespoons of white wine vinegar
• 1/2 teaspoon of salt

Toss all of the ingredients together in one bowl, with the exception of the feta, and let stand for 10 minutes. Sprinkle feta and serve. Makes 4 servings.

3. Fruity Quinoa Delight

• 1 cup of quinoa
• 2 cups of water
• 1/4 teaspoon of salt
• 1/4 cup of vanilla yogurt
• 1 ½ cups of sliced strawberries
• 2 peeled and sliced kiwi
• 1x11 ounce can of mandarin

2 tablespoons of pineapple juiceCombine water and salt in a pan and bring to a boil. Add quinoa while stirring slowly until brought back to boiling. Reduce heat and cover for 12 minutes, stirring occasionally. In the meantime combine yogurt and juice in a small bowl and whisk until fully blended. Combine fruits in another bowl and drizzle on the yogurt and juice mix. Add quinoa while combining all the ingredients, cover and chill for approximately 2 hours. Serve cold. Makes 5 servings.

4. Cherry Tomato-Thyme Salad

• 1 pint of red cherry tomatoes
• 1 pint of yellow cherry tomatoes
• 1 finely chopped clove of fresh garlic
• 1/4 cup of chopped sweet onion
• 1 tablespoon of fresh thyme leaves
• 1/4 teaspoon of salt
• 1/4 teaspoon of pepper
• 2 tablespoons of chopped parsley
• 1 tablespoon of olive oil

Combine all of the ingredients in a large bowl and toss gently until all ingredients are even combined. Serve with toasted multigrain baguette slices. Makes 5 servings.

5. Portuguese Avôzinha (Grandmother) Salad

• 6 cups of romaine lettuce
• 1 can of sliced black olives
• 1/2 cup of chick peas
• 2 sliced boiled eggs
• 3 tablespoons of olive oil
• 2 tablespoons of balsamic or apple cider vinegar
• 1/2 teaspoon of salt
• 1/4 teaspoon of pepper

Combine lettuce, olives, and chick peas in a bowl. Drizzle olive oil and vinegar. Add salt and pepper. Toss gently until combined. Top with slices of egg. Makes 4 servings. Add a can of tuna to make into a healthy and delicious entrée salad.
