A delicious and much healthier alternative to traditional beef burgers.

Whether you are vegetarian or not, veggie burgers are a healthy and tasty alternative to conventional beef burgers. Veggie burgers can be made with a variety of ingredients, from chickpeas to black beans, lentils or potatoes. When made correctly, your taste buds will be wanting more.

Here are a few summer recipes you can’t live without:

Quick and Dirty Black Bean Burger

Ingredients and Preparation

  • 1 large hamburger bun, chopped or torn into small bites
  • 3 tbsp olive oil
  • 2 tsp chopped garlic
  • 1 large can black beans - drained
  • 1 tsp grated lime rind
  • 1/2 tsp chili powder
  • 1/2 tsp chopped oregano (fresh or dried)
  • 1/4 tsp salt
  • 1 egg, lightly beaten
  • 1 egg white, lightly beaten

Place the bun into a food processor and chop for about a minute, until all crumbs measure about one cup’s worth. Add to bowl.

Combine 1 tbsp olive oil, beans and garlic in the food processor. Pulse until the beans make a paste. Place into the breadcrumb bowl. Stir in the rind and the rest of the ingredients. Divide into equal portions to make patties.

Heat remaining olive oil in a skillet and cook the patties over medium heat. On the first side cook for about 4 minutes, gently turn and cook on the other side for about 3 minutes. Top with your favourite burger toppings.

Corn and Bean Chipotle Burgers

Ingredients and Preparation

  • 2 tbsp olive oil
  • 1 large can of kidney beans
  • 1 can of black beans
  • 1/3 c breadcrumbs (dry)
  • 1 egg
  • 1/2 cup canned corn (drained)
  • 1/4c chopped red onion
  • Chipotle chili powder
  • 1/3 cu ketchup
  • 1 tsp honey

Combine both beans in a large bowl and mash with a fork. Add in the corn, breadcrumbs, onion and egg and stir contents. Form a patty (makes four). Add the patties to the skillet and cook over medium heat. Pan should be prepared with olive oil. Cook for about four minutes before gently turning the patty. The patties should be crisp when done.

Mix the chili powder, ketchup and honey, along with a dash of lime-juice and cumin – which are optional ingredients.

The Contemporary Yet Traditional Vegetable Burger

Ingredients and Preparation

  • 1 c garbanzo beans (chickpeas)
  • 1 c cilantro (fresh, chopped)
  • 1/2 cup carrots (chopped)
  • 1 tsp Kosher salt (sea salt)
  • Dash of pepper
  • Dash of red dried pepper
  • 1 jalapeno, diced and chopped (optional)
  • 2 pounds of red potatoes (peeled and chopped into hunks)
  • 1/2 c red onion (chopped)
  • 1 c breadcrumbs (dried)
  • 2 tbsp olive oil
  • 2 c spinach (fresh)
  • 4 pitas
  • lettuce and red onion slices for toppings

Combine the first 7 ingredients in a food processor and mix together. Put the potatoes in a saucepan filled with water and bring to boil, cooking for about 12 minutes. Add the onion and cook for another 2 minutes. Drain and let the potatoes and onion cool for about 10 minutes. Stir the chickpea mixture and breadcrumbs together and let cool in a refrigerator over night.

Divide the mixture into patties and cook in a skillet. Cook for about five minutes on each side or until the patties are a nice brown colour. Add the patty along with spinach and toppings to a pita and serve.
