5 Refreshing cucumber smoothies for summer

Cucumbers are not just for salad, but a great ingredient to add to any smoothie!

What happens when you mix spinach, parsley, vanilla, coconut, and cucumbers together? You get a beautiful blend of flavours that refresh the body and taste buds. 

Cucumbers are not just for salad, but a great ingredient to add to any smoothie. The high water content in cucumbers is irresistible to the consistency of your favourite summery drink. Here are five refreshing cucumber smoothies to try during the sunny season.

Tropical Cucumber Smoothie


  • 3-5 large ice cubes
  • 1/4 fresh pineapple, cut and cubed
  • 1 large banana cut into chunks
  • 1 cup of apple juice or pineapple juice
  • 1/2 cucumber

Place all ingredients into the glass bowl of the blender and puree until the texture is smooth and blended. Some pineapple threads may remain. The smoothie may be poured over ice and immediately served. Best served when cold. 

Pink Beet Cucumber Medley


  • 1 medium sized beet, washed, peeled, and grated with a cheese grater. Approximately 2/3 cup of beet.
  • 1 medium sized organic cucumber, or 1 English cucumber
  • 2 organic apples (medium sized). Washed and grated. Should yield approximately 1/3 cup. Recommended apples include Gala or Braeburn
  • 1/4 cup chopped celery (organic)
  • 2 teaspoons minced ginger
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 cups ice water

Mix all ingredients into a blender and process until the ingredients are well-blended and smooth. Best served when cold. Beets and cucumbers create a great detoxifier. 

Blueberry Cucumber Blast


  • 2 large organic or garden cucumbers. Peeled, seeded, and chopped into chunks. Should yield approximately two cups of cucumber
  • 1 cup of low-fat vanilla yogurt
  • 1 cup fresh or frozen blueberries (organic)
  • 2 tablespoons of honey
  • 1 tablespoon of lemon juice

Add all ingredients in a blender and process until the mixture is smooth and creamy. Cucumbers blend smoothly and provide a low-cal breakfast or snack, as a midday pick-me-up.

Strawberry Cucumber Blended Smoothie


  • 1 to 1 1/2 cups of frozen strawberries
  • 1 cup of almond milk (refrigerated)
  • 1/2 cup of finely chopped English cucumber
  • 2 tablespoons of organic honey
  • 1 teaspoon of freshly squeezed lemon (more is optional)

Add all ingredients to a blender and process until the mixture is smooth and creamy. More almond milk may be added as necessary, depending on your consistency preference. For an alternative taste and flavor, you may use blackberries instead of blueberries. Serve cold or over ice.

Cucumber and Melon-Mint Smoothie


  • 2 cups of melon, honeydew or cantaloupe, chopped and cubed
  • 6 fresh organic mint leaves
  • 1 frozen banana, chopped into chunks
  • 1/2 cup of cucumber – peeled and grated
  • 1 teaspoon of lime juice (freshly squeezed)
  • 3 cups of dandelion greens, mustard greens, or kale
  • 6-8 ounces of almond milk (unsweetened)

Add the liquid and fruit to a blender and process for about thirty seconds. Blend in the greens and mix for another thirty seconds, or until the mixture is creamy. Serve cold or over ice. Add more almond milk if you prefer a creamier consistency.
