After my second visit to Cuba I discovered the magic of the vegetable called Cassava, also called Yuca. Although it has a thick brown waxy coat on it, it actually is very easy to peel and cooks just like potato.
I personally have chopped it up to roast in the oven, I’ve used it in soups and have sliced it into home fries!
No potato reactions, but with the same starchy potato appeal! Enjoy!
